Last Dec. 17, we had a family gathering to honor my mom's 9th day of passing. (GOSH, I still can't believe it!)
I was at Pen so I couldn't really help out with the dinner setting but when I got home, it didn't look like I was needed at all. My brothers and sister-in-law, Ginny did a marvelous job! My dad of course facilitated the whole thing. I was teary eyed because this was my mom's passion. To set up parties, flower arrangements and taking care of the menu.
I have to commend Teddy. He is our driver/cook. He prepared all the food and it turned out so yummy. He also took charge of being the lechon chopper. There is also Arnel, our driver/florist. My mom honed them to be more than just a driver. She taught them how to work on other things even if that task is somewhat on the feminine side of life.
Our pelota court was transformed into a dining area with the wall as the screen for the projector. Ginny prepared a slideshow featuring my wonderful mother.
It was a good night because we were with family and staff that have one thing in common. Our love for Jul B. Dizon.

At Last..ESCOLTA!
ESCOLTA will soon celebrate the 1st Monthsary sometime next week and I still have to blog...but finally, I am ready.
I love a lot of things about ESCOLTA. I kinda just want to put a king size bed inside and make it my home. Check out the photos and you will see what I mean.

Am I Too Late?
I have never had so much FOIE GRAS in one night in my whole entire life. I remember telling the Executive Chef that I had plans on stealing one whole plate of foie gras before the night ends. It's THAT good. Yippee for Executive Chef Rene Ottlik.
Let me show you what I mean.
They panfried them in front of your eyes and you put them on bread and devour it in a few seconds. At least that's what I did.

And now for my FAVORITE part. Dessert. Firstly, let me congratulate Executive Pastry Chef Roberto Molleman for a truly amazing, unique and delicious set up.
When I saw this, I nearly fainted with joy. I LOVE strawberries with chocolate. Sigh....heaven.
